Rick's Super Tacos!

Want some Tacos that will make you want to hug yourself? Well these will do the job!

What you need: 1 pound of ground beef. (70/30 is best) You don't want it too lean. 1 large Onion chopped up. 1 pound of potatoes cut up in cubes. Salt, Pepper, Garlic powder and Cumin, Lard, corn tortillas. You will also want some lettuce shredded, Tomatoes cut up, Cheddar Cheese shredded.

Now here is what you do:

Put the potatoes in a pan and cover with water. Salt the potatoes to taste. Cook until tender and done.

Now take a large skillet and add just a little bit of lard. Not much, just enough to grease the pan. Add your ground beef and onion and bring to a medium heat. Now add some Garlic powder (to taste) along with Cumin (go easy on this) and salt and pepper. Let cook on medium heat until done. Be careful not to let it burn. Keep stirring it in the pan. When done, take it off the heat, do not drain. Now combine your hamburger mix with the potatoes and mix thoroughly mashing the potatoes as you do. The potatoes will absorb the juices from the ground beef mixture and will greatly enhance the taste of your taco.

Now lets build a Real Taco!

First you want to warm your tortilla so that it is pliable and will not break when you bend it. Now take a rounded table spoon of the meat and potato mix and place it in the center of the tortilla making a line from one side to the other. You don't want to go edge to edge, leave a little space. Fold it over and pin it with a tooth pick. Get as many as you want ready then we can go on to the next stage.

Now you want to take that large skillet again (washed and dried) and add enough lard to bring it up to about an inch to an inch and a half of the side of the pan when it is melted.

Bring the lard up to a medium heat and gently place one or two tacos into the pan depending on how big your pan is. You will need some tongs to do this best. Brown the first side and then gently turn them over and brown the second side. Take them out when done and place them in a large baking pan with paper towels or brown paper bag to absorb the grease. Salt them right away! Yum!

To serve, place on a platter where everyone can take what they want. Place the lettuce, tomatoes and cheese in separate bowls.

Now all that is left is to remove the toothpick and add some cheese, tomato and lettuce! If you like Salsa, now would be a good time to add it.

Ann's Cornbread

Recipe is for use of a 8"x8"x2" baking pan

The recipe can be doubled for use in a 13"x9" pan

Preheat oven at 400 degrees. Grease pan.

Ingredients:

1 cup flour

1 cup corn meal

1/3 healthy cup sugar

(for a doubled recipe, I use 1 cup of sugar. Rick likes it sweet.)

2 tsp. baking powder

1/2 tsp.. salt

1 cup milk

1/4 cup vegetable oil

1 egg

Mix the dry ingredients. Mix the liquid ingredients in separate bowl. Make a well in the dry ingredients and pour in the liquid ingredients. Mix well. Pour into prepared pan and bake for 20-25 minutes. Check for doneness, by placing a toothpick in the center and if comes out clean, it is done.

Now for the good part!

Put some butter on them while they are still hot and eat them up!

They go good with syrup!
